Mud Pudding Cake

    1-1/4 c. sugar (divided)
    1 c. flour
    7 tbsp cocoa powder (divided)
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 c. milk
    1/3 c. melted butter
    1 1/2 tsp. vanilla
    1/2 c. brown sugar
    11/4 c. hot water

    Cooking Instructions

    Preheat oven to 350°. In a large mixing bowl combine 3/4 cup of the sugar, 3 tbsp of the cocoa, flour, baking powder, salt, milk, vanilla, and melted butter. Mix well and pour into medium casserole dish or deep baking pan. In a second smaller bowl, combine remaining sugar, remaining cocoa, and brown sugar. Blend and sprinkle evenly over the wet mixture in the casserole dish. Gently pour 1 1/4 cup very hot tap water over the top of the layers and place in the oven for 35 minutes. Remove from oven after 35 minutes. Cake will be baked around the edges and runny in the middle.

    Note: This mud pudding cake is done when it is baked along the edges and top crust but has a runny pudding center. This cake should be served hot out of the oven over a scoop of vanilla ice cream and maybe some freshly whipped cream!
