1 whole turkey
1 whole onion
2 sprigs fresh sage
Prep turkey as such: Salt (and pepper) inside of turkey. Cut the onion in half and put into cavity. Pick fresh sage and add to cavity. Salt and season outside of bird. Place in roaster and cover top with aluminum foil. Bake at 250 degrees. 12 pound turkey--bake for 5 hours, 20 pound turkey-bake for 7 hours
Note: I grow my sage outside and I pick leaves even in the dead of winter to season fowl. It's still fresh even then. I think the fresh air adds something to the taste.
