8 med. sized potatoes
1 large onion
nutmeg (for taste)
1/4 stick butter
1/2 cup of beef broth

Cooking Instructions

slice potatoes and onion and layer in microwave casserole dish. Sprinkle fresh nutmeg ( I grate about 1/4 of a nutmeg), salt, pepper and dot with butter. Pour the broth over the entire casserole. Cover tightly with plastic wrap and then pull back one corner of wrap to vent.
Cook in microwave for 20 minutes. These are always a big hit at carry in dinners. I double the recipe for church, etc. dinners and carry them in a crockpot to keep warm.
