Refrigerator Bran Muffins

    2 c. boiling water
    2 c. 100% bran cereal
    2 c. sugar
    1 c. shortening
    4 eggs, beaten
    4 c. buttermilk
    5 c. flour
    5 tsp. baking soda
    4 c. ALL BRAN cereal

    Cooking Instructions

    Combine 2 cups BOILING water 2 Cups 100% bran cereal mix, and set aside to cool. In another bowl...cream together (Use the largest bowl you have,Tupperware fix and mix bowls are great, they have seals) 1 Cup shortening, 2 Cups sugar, 4 beaten eggs, 1 qt (4 cups) buttermilk (if you don't have buttermilk you can make your own 4 cups milk, 4 Tablespoons lemon juice, let stand 5 minutes). In a third bowl, sift together 5 cups white flour and 5 tsp Baking soda. Add the flour mixture to the creamed mixture (shortening,sugar and eggs). When mixed well, add 4 cups ALL BRAN cereal, mixing only until moist. Then add your cereal/water mixture to this. Cover and set in the fridge until used. TO PREPARE: Drop a few large spoonfuls onto PAPER plate, and bake in the microwave for 1 to 2 minutes. It will rise and look dry when its soon as you pull it out, spread with jelly, jam, butter or whatever topping suits you.

    Note: This will keep in the fridge for up to 30 days. Keep covered.
