Chicken, boneless, skinless breasts
Chicken must be room temperature prior to preparing. For 4-6 breasts, I would use at least 2 sleeves of crackers. Crush crackers in a baggie. Dip chicken pieces into butter. I use Smart Balance. Put chicken into bag and cover with the cracker crumbs. Put into a casserole dish sprayed with Pam. Sprinkle leftover cracker crumbs overtop chicken pieces, add unused butter (within reason) overtop also. Cook in 350 degree preheated oven for 30 - 40 minutes until done. This is the easiest chicken recipe ever and it is always great.
