12 large Jalapeno Peppers
1 pkg. Cream Cheese (softened)
6 slices Crispy Bacon (crumbled)
1/2-1 c. Shredded Cheddar Cheese
2 Jalapeno peppers (minced)
Pre-heat oven to 375°. Slice peppers lengthwise and remove seeds. Lay peppers skin side down on a baking sheet. In a bowl, mix remaining ingredients. Transfer cream cheese mixture to plastic bag and cut the corner of the bag and use to stuff each pepper (you can stuff with your fingers, but it gets messy). Bake stuffed peppers 35-50 minutes until tender. Transfer to serving platter and enjoy!
Note: You can add crab, shrimp, or whatever suits your taste to this recipe. Experiment, and have some fun!
