1-2 heaping tbsp lard or olive oil
1-2 onions (chopped)
5 lbs ground beef or turkey
2-4 (16-oz.) jars green salsa (hot or mild)
1 No.10 can refried beans*
2 heaping c. shredded cheese
Saute chopped onions in a little lard or olive oil until translucent. Add ground meat to the onion and brown together, adding more oil if necessary. When the meat is cooked through add salsa (to taste) and beans. After the meat, salsa and bean mixture has heated through add the shredded cheese and mix well. Heat the flour Tortillas. You can serve the filling as is or place bowls of sour cream, jalapenos, cilantro, red onions, thinly shredded lettuce, and sliced black olives on the table as build your own burrito options.
Note: *Or 1/2 whole beans and 1/2 refried beans. This is a very forgiving and adaptable recipe. You can use whatever you have on hand and it will still turn out great.
