Ingredients:


1 3-lb. bag boneless, skinless chicken breasts
2 pkts. McCormick's White Chicken Chili Seasoning Mix
3 dash cumin
Water, enough to cover the chicken
2 cans Corn, drained 1 white onion, chopped
2 cans white Northern Beans, drained/rinsed
2 cans navy beans, drained/rinsed
2 cans green chilies, drained
2 bell peppers (I use red & green)

Cooking Instructions


Slice & put the chicken in a pot. Cover the chicken with water & sprinkle in about 1/2 pkt of the seasoning mix and 3 or so dashes of cumin. Boil covered in a pot for about a hour. Once the chicken is mostly cooked, drain it & add it to the crock pot or large pot--I use a 5 qt crock pot. Chop & add onions & peppers. Drain & add corn. Drain, rinse & add beans. Drain & add green chilies. Add the remaining seasoning & the other packet of seasoning. Gently stir all together to mix. Cook on low 6-8 hours or high for 3-4 hours.

Note: You can add more heat by using jalapenos instead of green chilies and by adjusting the cumin. I serve mine with sweet corn bread and a salad.
