Zucchini Brownies

    2 c. grated zucchini
    1/2 c. oil
    1/2 c. water
    2 tsp. vanilla
    1 1/4 c. sugar
    2 c. flour
    1 1/2 tsp. baking soda
    1/2 c. cocoa
    1 tsp. salt

    Cooking Instructions

    In a large bowl, combine zucchini, oil, water, and vanilla, then add sugar. Blend flour, baking soda, cocoa, and salt; add to wet mixture. Blend all together well, then spread in greased 9 x 13 pan. Bake for 25 to 30 minutes at 350°. Best served with a chocolate or vanilla icing.
