2 medium zucchini, shredded
4 green onions, cut into strips
1 pkg. ramen noodles, any flavor, I like chicken!
1 tbsp flour
1 tbsp cornstarch
1 cup water
Shred your zucchini, salt it and let it sit for about 10 minutes or so. Meanwhile, cook the noodles and drain. Rinse the zucchini and squeeze the liquid out. Sprinkle flour over zucchini. Combine eggs and 1/2 the seasoning packet from noodles. Add zucchini, onions and noodles. Get your oil good and hot, and add mixture to the pan in 1/4 cup measurements. Fry on both sides on medium heat until browned. To make
gravy, just use cold water, add the other 1/2 packet of seasoning mix and cornstarch. Bring to boil and pour over patties, or just use soy sauce on top. All of my kids love these!
