What is best way to catch an escaped turkey that can fly?

I have sebright serama and my grandfather has a rir rooster and they are all very nice but my other grandfather has a new hampshire red and he is mean as a snake but I personally think it is all about how they are raised.

Okay so I have nine hens and was wondering how many roos could I have with nine hens? I have found two very pretty roos and was wondering if I could have them both or if they would tear up my hens.
