I buy the 2-1 lb pack at sams too. Then have a small jar to keep some out and keep the rest in the freezer.
I never thought to keep the small container in the fridge. I usually use it up pretty quickly and I just keep the small one at room temp.
Don't know if anyone has metioned this before. I keep my yeast in the freezer and get it out before hand to warm up.
