Speaking from experience, the Bobwhites are more wild. The Coturnix can be quite tame and generally lay eggs more consistently.
I've never raised cali's but I've read they need lots of space.

Hi, it sounds like you're doing everything you can. I'd keep dipping beaks in water so they stay hydrated and the same with food. Keep them warm but not too hot. If they're panting they're too hot. I hope they recover.

Hi, you put the vitamin drops in the water but I'm not really sure how much.
I usually just put organic apple cider vinegar (with mother) in every waterer and I add some honey
if they are not too peppy or it's really hot out.

That's alot of chickies! Can you put an ad on craig's list with a cute picture of some of your chicks and unload them fast? I've had good luck this way. I've given some away to make room also.
I would use a spray bottle with very warm salt water. They like this once they get used to it. Just make sure the bird is dry and warm so it doesn't catch a chill.
Oh the poor thing. She will probably bounce back fast. Separate her first of all and keep food and water close.
I had a hen in a terrible fight with a roo, I didn't thnk she would live but in a few days she looked like it never even happened.
Some people just use the big plastic tubs with the lids. They cut out a big section of the lid and duct tape on some wire, put a heat lamp on and you're done.
There's a great facebook group called Wisconsin Quail Breeders Club. You don't have to be from Wisconsin. You could probably get a fast answer.

That's great! I'm wondering if maybe they shouldn't be mixed in with chickens and pheasants as I've heard they can have "bugs" that will harm quail.
