    You can use plastic wrap and a rubber band to cover the jar. That will keep the local yeast out. Also, store the starter in the fridge and take it out several hours before using it to let it warm up and get active.

    That is a relief! I did get into trouble on another thread with a discussion about salt in the diet. I try to be more self aware in my communication. My Youngest thinks I might be a bit on the autism scale. She is likely a bit higher.
