I don't really even have a garage. We have a garage-sized workshop but no garage door on it. We have a covered carport, which worked fine until a tree fell on it in December.
I think it'd be easy to add ventilation. Leave a door or two open and screen with hardware cloth. Add windows, maybe. At that size, you could add a varn fan. Really, it'd be a barn, basically. I'd be all over that! So many possibilities! What fun!
Reading through your plans again... If the coop is inside a garage, why even build a coop? Would it be possible to just use the garage? Just set up a roosting area and some nesting boxes? Sounds very cool to me! Wish I can an unused garage for mine! Would make winters much easier.... But maybe...
