I have 18+ Guineas eggs
(Mostly Self Blues, few pieds, 2 whites,1 purple,and 1 grey)

Pied just refers to white patches, your appear to be Pied Pearl Gray.

What color are the cocks within this flock?

Same here, I like the oddity of the different colors. I have a several colors in my flock as well.
