6-7 week old Ameraucanas (or EE?) & very submissive cockrel

Hi, this is my first post on this forum! I've been raising 4 backyard chickens sold to me as Ameraucana pullet chicks but I've learned it's likely they're EE. If anyone can confirm this that would be great. Additionally I'm pretty certain that 3 out of 4 are female. The one I'm confused about has pointy tail feathers but acts extremely skittish and is the most shy of the bunch. This one is very non-confrontational and is very quiet. So I'm not sure if maybe it has yet to grow into being more dominant or if I was wrong about the tail feathers.

First 2 pics are of the pointy tailed one and the next two are of the bossiest pullet in the group who are from the same batch for comparison.

Someone misinformed you about the tail feathers. The shape of a baby tail is rarely of any significance. The things to watch for on EEs are early comb development and male plumage patterns. I don't see either of those things on any of your chicks.
 
UPDATE: its been 3 weeks later and I have update photos as requested. Ive also been seeing several of the chickens occasionally spar each other that ive read only males do; kicking up their claws and pecking.

One of my EEs clucks and honks to the others when they find food, which I read was a rooster behavior. (The last one pictured)

All in all, I figure I still need to wait a few more weeks until saddle and hackle feathers come in but I would love to hear opinions. I did my best to take a front on photo of the comb and a side profile for each chicken.

I don't know where you're reading but it isn't a reliable source. There is nothing roosterly about any of them.
