Adding humidity to incubator

I have a chance to aquire a medical grade incubator but it does not have a humidity source. After reading some of the forums on this site can I just add a tray/bowl of water with a sponge in it and then track my humidity levels and adjust accordingly? Any advise or help would be appreciated.
 
Used in the medical field for cultures, etc. It has very accurate temp control with multiple alarms. From what I understand it retails for around $3500 and I might be able to pick it up for $100-150, we all know how that goes though. :)
