How long do you age quail before eating? and do you just process and leave in fridge to age?

Related question for the hunters...
Is it wrong to cut a deer into the meat cuts desired BEFORE aging? Can it be aged all cut up instead of a whole hanging carcass?
 
I don't. Chickens yes, but quail I just process and eat. One time I determined who my excess roo was when he crowed as I was checking on them at lunchtime. I took him in, processed, cleaned, cooked and had him eaten and the bones in the trash less than an hour later.
 
I have done both, both ways. Quail I usually soak in a mild salt water over night. Just more habit that logical. But really notice no difference unless you get the salt water up to brine salt levels. Then you can over do it. As for deer, hanging in a cool place till processing I feel helps some but not absolutely mandatory. Bill
