Almond Meringue Torta

    Got this from my favorite tv Chef, Lidia Bastianich. It's gorgous and real easy... Enjoy

    Mis en Place:

    2 store bought pie crusts

    1 1/2 cups toasted sliced almonds

    4 egg whites
    1/4 tsp salt
    3/4 cup sugar
    1 Tbls lemon zest

    1 beaten egg
    2 Tbls. sugar

    Preparation:

    Preheat oven to 375

    Butter and dust with flour your pie pan. Roll out one of the pie crusts and place it in the pan. Meanwhile roll out and cut other crust in 1/2 inch wide strips. Reserve for later.

    Make your meringue: place egg whites in mixing bowl with salt, beat on medium speed until they start coming together, now slowly add sugar and place mixer on high until you get lovely peaks. Remove bowl from mixer, very gently fold in lemon zest and toasted almonds into egg whites.

    Fold egg white mixture into your pie pan - now lay the strips across top in one direction, then lay down remaining strips at 90 degree angle so you get a nice lattice. Crimp all strips to bottom pie crust. Brush with beaten egg and dust top with the 2 Tbls. sugar. Bake in preheated 375 degree oven about 40 to 45 minutes taking care NOT to slam any doors or peek in oven too much. Remove from oven and let cool compeltely. Serve with espresso...
