Another way to use up some eggs...Bread Pudding

    Found this recipe on allrecipes.com and tweaked it a bit. I left out the raisins...not a big fan... it was really good. I put it together the night before and stuck it in the frig. Got up the next morning and baked it for breakfast. It was all gone.

    Bread Pudding

    Ingredients
    · 8 slices day-old bread
    · 4 tablespoons butter, melted
    · 1/2 cup raisins (optional)
    · 6 eggs, beaten
    · 2 cups milk
    · 1/2 cup white sugar
    · 1/2 cup packed brown sugar
    · 2 teaspoons ground cinnamon
    · 1 tablespoon vanilla extract

    Directions
    1. Preheat oven to 350°
    2. Break bread into small pieces into an 2 quart baking pan. Drizzle melted butter over bread. If desired, sprinkle with raisins.
    3. In a medium mixing bowl, beat the eggs, beat in the sugar and cinnamon. Stir in the milk, and vanilla until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
    4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

    Oh, that looks wonderful. [​IMG] I had never had bread pudding until last year. I always thought it sounded terrible. My husband and oldest son wanted me to make some. Found a similar recipe and made it. I really liked it. Will give this one a try over the long weekend.

    One of my favorite desserts [​IMG] Made with homemade bread and a rum sauce [​IMG] [​IMG] [​IMG] [​IMG]
    You can add apple pieces or any other fruit and nuts you like.

    That's how my mom ate it. Me? Rum sauce is good ,but nothing is as good as chocolate syrup or hot fudge sauce.
