I am not a skilled breadmaker, but this has come out perfect every time. It is delicious! I have modified the boule into a little loaf shape so we have po-boy style buns, but you can also make a loaf big enough for slicing. I'm planning to give as christmas gifts a loaf of this pretty bread and a little jar of homemade jam.

I was *really* skeptical, it's so different from other bread methods, but I swear it's fantastic!

I may be wrong, so don't quote me.

My understanding is that you can use unglazed floor tiles as a substitue for a baking stone. Something like 1/2" saltillo tiles, lined up.

I don't have a baking stone, I used an upside down glass baking dish, and it came out fine.

Couldn't you use a regular cookie pan like I bake all my breads on?
