Best-ever Raspberry Crisp!

Okay--here it is--this is for a HUGE batch...and this is the original recipe.

12+ cups of fresh (washed) raspberries

2 boxes of yellow cake mix

1 cup of quick oats

1 cup of melted butter or margarine

1 TBS of cinnamon

1/2 TBS of nutmeg

1 TBS of granulated (white) sugar

3 TBS of packed, brown sugar

Preheat oven to 350

Grease the bottom of the pan

Pour the raspberries into the pan

In a separate bowl, mix cake mix, oats, cinnamon, sugar, nutmeg all together. Pour in melted butter. Mix with a fork until crumbly.

Pour the mix over the raspberries.

Bake 35-40 until the top is golden brown.

Serve with a large scoop of vanilla ice cream.
 
Sounds delish! I want it now and no raspberries.

I have another (I'm guessing) 12+ cups to pick tonight once it cools down...I'm making raspberry Jell-O pie next.

Thank you, we are not that far but not hardly ever a reason to come up that way usually. We were up that way like a month or 2 ago bought a car from a guy up there. We go to the casino sometimes when up there cause they have bingo and I love bingo....I won last time too. Which we really should not be doing so to just come for that is not that often either.

That sounds good too.....will you post that recipe too please.

Oh the Jell-O one--it SUPER easy....

You'll need:

1 graham cracker pie crust
1 box of raspberry-flavored jell-o
1-2 cups of raspberries
Whipped Cream

Just make the Jell-O according to the directions on the box (for Jell-O with FRUIT in it)....and pour that into the pie crust (after it's semi-set and the fruit has been added).

Let it finish setting

Top with lots of whipped cream!

I like this one when it's hot outside because you don't have to turn on the oven!

Peach Melba jam

4 cups chopped peaches (no skins)
1 cup raspberries (I smash them first, then measure a cup)
Juice of 1 lemon
1-2 cups sugar (I think I put 1 1/2 when I made it)

Put peaches and lemon juice in a pot and simmer 10 minutes. Mash with potato mashed. Add raspberries and sugar. Cook over medium heat (stirring often) until it thickens and gels to a frozen spoon.
