Put a decent sized pan of water on to boil, gather your eggs and a large slotted spoon (I prefer using what is called a spider basket). When the water has come to a full boil place your eggs on the slotted spoon (the spider basket lets me do 6 at a time) and immerse them in the boilng water about 45 seconds. Remove from the water and use in your recipe. Coddling eggs is absolutely a must when making Caesar's Salad Dressing...
