Craving some yummy bran muffins, I found a recipe I liked for banana bran muffins and actually had all the stuff it called for. I jacked the recipe up with some grated carrot and a little molasses.
Mis en place:
3 large eggs
2/3 cup packed light brown sugar
1 cup mashed ripe bananas (2 medium)
1 large carrot, grated
1/3 cup molasses
1 cup buttermilk
1 cup unprocessed wheat bran
1/2 cup wheat germ
1/4 cup corn oil
1 teaspoon vanilla extract
1 cup whole-wheat flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 tsp fresh grated nutmeg
1/4 teaspoon salt
1/2 cup chocolate chips
1/3 cup chopped walnuts
Preparation:
Preheat oven to 400 degrees. Combine eggs, bananas and brown sugar until combined well, next add carrots, buttermilk, molasses, corn oil and vanilla extract and mix one minute. Add remaining ingredients and combine for about 1 minute. Grease your muffin tins with butter and distribute batter evenly - in my case I got 12 large muffins and 8 mini muffins out of the batter. Bake at 400 degrees about 15-25 minutes until golden brown and they spring back a little to the touch,
