I could tell in about 3 weeks of age. My tom was proud to strut his stuff. Plus the tom will be bigger than the hens. As far as a fence I've heard 10x10 per turkey however I have a 10x16 and I have 5 turkeys and they are doing fine. The heat lamp I kept mine on them until I moved them outside. I really don't know on that one, Sorry.

well by the looks of your baby that you posted (btw--OMG ITS SOOO CUUUUTEE!!) if its a boy it'll try to strut & gobble (which will sound REALLY weird the first couple times it comes from its beak) the girls are courageous they eat more bugs than the males, they fly more often, pick through their feathers, are smaller than the males, more often have smaller snoods, caruncles, & wattles & when they get bigger they'll start laying eggs (of course).
    hope i helped

When they get their adult feathers the hens will have white tips on the breast feathers. The juvenile feathers on both sexes will have lighter tips so you won't be able to feather sex until they get their adult plumage.

I'm going to guess that the one on the right (lower pic) is probably female. I'm still working on improving my sex prediction by shape of skull :p Actually 60:40 for ten poults, so far.

Keep the lamp at one end of the brooder (just raise it as behavior indicates) for awhile longer (make sure brooder is covered with something like hardware cloth as even the BB's, when little, do pop-up like corn on occasion (heritage poults are vertical take-off and landing addicts).
