Breaking News...that could effect the holidays!

I noticed I could not find just plain canned pumpkin at the grocery, only pumpkin pie "mix" (

I searched online and found that due to the rain/cold there is a severe shortage of canned pumpkin this year.


OMG!! I am stocking up on fresh pie pumpkins and freezing them for later.

...but I really love pumpkin pie!
You just made my husband very happy. See i've been trying to get a decient pumpkin muffin recipie for years, and apperantly failing. One year they were disappearing as fast as I could bake them, thought i had "the one" (I thought they were a shade bland), seems the men (his friends would take 1/2 dozen home with them) hated them, but didn't want to hurt my feelings, so they'd choke one down and "take the rest to work to share" which means toss them to the ducks next to work, apparently not even the birds would eat them.
...don't hate the pumpkin!

I have a wonderful pumpkin bread recipe that could probably be used for muffins. You want it ?
Best pumpkin muffins I've ever had (and apple sauce muffins, and orange muffins, etc...)

(I leave out the raisins, no one likes them much around here, but I do add in nuts with the pumpkin ones).
Also ETA - this makes a lot of mix, you just keep it and use what you need while baking- I store the extra in a plastic container.

Triple Muffin Mix

6 c flour, all-purpose
2 T cinnamon
1 T baking powder
1 T baking soda
1 1/2 c raisins -- *
1 1/2 t salt
1 t nutmeg
1 t allspice
1 t cloves
1 1/2 c sugar
1 1/2 c brown sugar

Combine all dry ingredients, stir in raisins. Keep in ziplock bag or
sealed tupperware in the fridge. * We use dried sweetened cranberries
since hubby hates raisins.

For six muffins: (double for 12)

Combine 1 egg, 1/4c vegetable oil, and *ONE of the following: 3/4c
mashed bananas, OR 3/4c applesauce, OR 1/2c pumpkin mixed with 1/4c
water. Stir in 1 1/2c muffin mix. Spoon into greased muffin cups. Bake
at 350 for 20-25 minutes.
*We have also had good results with canned crushed pineapple.
