Breeding for Meat

I met two chefs at a local farmers market. They raise meat chickens for their restaurants. They were looking for Black Copper Maran roosters, and I happen have a couple that are only about 6 wks old. They said the BCM produces the best "physique" for meat chickens. I am a novice but I told them when I was sure these were roosters, I would call them.

Does anyone have any information about their claim?

Consider this ... there are thousands of chefs at fine restaurants that prefer to use the CornishX as their chicken of choice and TWO that prefer the Copper Maran. Also , MILLIONS of CornishX are produced annually not only for commercial chef use, but also for everyday dinners and BBQs at home , vs. ? of the Copper Marans .

I've seen the claim many times that Marans are a favored table bird in France, along with Houdan, Dorking, etc.

Broilers are the "favored" chicken because that is the bird readily available and fastest/cheapest to grow.
