butternut squash recipe that goes with fried chicken

    A neighbor just gave my wife a butternut squash and we want to have it with fried chicken. The only recipe we have has brown sugar and a mess of spices. We want more of a plain recipe. Any HELP out there?

    I just roast mine in the oven, and then mash it up with butter. One time, I roasted it alongside a chicken in the roasting pan and basted it along with the bird every so often. It was fantastic. And very simple.

    I should add, I'm not a fan of squash with brown sugar...I didn't even think I liked squash until I started making it in more "savory" ways. Butter, chicken broth, etc. Squash often has a nice flavor all on it's own. People seem to like to do way too much to it, in my opinion.

    I do the same as 3peeps (also raost in the oven) and now to this day I can not eat squash with brown sugar in it! I love it just the way it is with some butter and a little salt and pepper.

    Hi I agree, sweet squash is not my thing.

    My favorite way to make it is heat the oven 375 degrees. Cut your squash in half and scoop out the seeds. Then rub the insides with butter (Olive oil if you want to be more healthy.. but I love butter) Sprinkle some salt around inside. Place the squash halves cut-side down on a baking sheet and bake them for about 50 minutes or until soft on the inside (edible) part.

    I have roasted them like everyone else but instead of using butter I ahve used butter that I mixed with Harissa (moroccan hot sauce) or chipotle in adobo then slather on and roast.

    Oh I am going to have to try the chipotle squash. Yummy! I bet that will be great alongside roasted meats.

    Hey horsewishr.............. I dont care for squash at all ,but I am so trying to add it to my diet.........I have added Hubbard Squash in stew and loved it....... Question......... do the rolls taste like squash?

    nope. they're just soft, moist, and very slightly sweet. You'd never guess there's squash in them if you didn't know.
