canning ????

this past season / summer was my first time of canning by myself and mostly by reading and following directions. My favorite and well fingered book is the latest version of the Ball canning book. It's called the Blue Book Guide to Preserving by Ball. I picked mine up at the Wilco farm store. But I have seen it on line at amazon and in my local multi department grocery store. I decided to focus on stuff I could can in a water bath canner and leave the pressure canner to this season so I was not buying "everything" My rule of thumb was if I bought jars then what went inside had to come from my garden or picked out back as wild like the blackberries that I canned into jelly. So I bought two sizes of water bath canners when they were on sale. The few hand tools needed to negotiate getting the jar in / out. The book really gives all the details needed so it is packed in my bag during the season for easy reference. A favorite website with great pictures and instructions is

Home Canning & Freezing

This couples experience is fantastic and the pictures and common sense approach is very userful. Between the two I did not need much else and I put up the Blackberries, tomato sauce, pears, pickels and the biggest hit from the garden the tomaillio green salsa. Yummy!
