Chicken Behavior - Shoulder Roosting

Yet another silly noob question (I seem to be full of them).

I see all over BYC these pictures of young birds who seem to be running out and about inside their family's home, or perched up on their shoulders...

My 3 week old pullets are literally pooping every few minutes. I can't take one out of the brooder for any time without getting a bird bomb. Do all these people have a much greater tolerance for shoulder poop and than I do? Or as the birds get older are they less, shall we say, prolific?
 
Yes on both. Chickens poop less frequently when they're grown up, and people who handle their chickens do so knowing they will most likely end up getting pooped on. The important thing to remember is: Poop washes off. Socializing my chickens is worth the risk.
