Well here's a little bit about egg laying:

When you have chickens you will notice that day by day their egg color gets paler, this is because they have almost used up their egg color pigments. This why hens take a few days off, to regain pigments and energy for laying more eggs, if a hen laid an egg every day they wouldn't live very long. It's kind of like Coturnix quails, if you don't let them have a rest from laying will usually live for 1-2 years, though some lucky ones can live from 5-8 years (they are mostly males though, females get exhausted from laying eggs).
