Chicken Tortilla Soup in the crockpot

Before we leave for work we throw one cut up frozen broiler (legs, thighs, wings, breasts) into the crockpot with a gallon bag of frozen tomatoes (frozen from last years garden, but you could used canned - probably about 2 of the big cans.)

When we get home from work we pull out the chicken skin and bones. From cooking in the crockpot all day it is already pretty much shredded the meat. Then we dump in 2 cans of enchilada sauce, a can of black beans and a can of corn. Add some salt, pepper and maybe a little cumin. Let it heat back up and serve with tortilla chips (use instead of crackers.)

Num num, easy and so tasty!!!
