Dishes = dawn and water
Coop = vinegar and water spot clean when needed
I haven't had sick or infested chickies yet, in that case I would probably use something different to decontaminate.
I used an Amish whitewash on the inside.
Dishes - I don't even bother with dish soap, just scrub, rinse, dry off.
Coop - DRY should be the goal, not spotless and clean. For me a broom and rake and a paint scraper for stuck on poops is "clean enough." If you must use anything wet in the coop, you need to let it dry out as thoroughly as possible before putting the chickens back in. But really no reason (unless treating for something specifically) why you should be washing out the coop.
