    I have my southern coconut cake (which I only make at Christmas) on my blog today.

    Mmmm, we love coconut cake at Christmas.

    Dense, moist cake and sinfully good icing!

    I love coconut cake but hubby does not like coconut. [​IMG] I miss having fresh when I lived in FL. Thanks for the recipe.

    No. It is frozen flake coconut, sugar and sour cream. The cake needs to sit in the refrigerator 2 - 3 days for the icing to do its magic.

    After the 3 days I top it with some fluffy icing and sweetend angel flake coconut.

    That sounds even better than 7 min..which for me sometimes ends up gritty. I always make a cocanut cake at Christmas along with a Red Velvet Cake.

    I'm with you, Miss Prissy, on serving the coconut cake for Christmas, and I'll try your recipe this year(!), but my other offering is always a rum cake that my son and DH love. Aren't holidays fun when we pull out the stops on all the special recipes? ~G
