Here is one of my family's favorites.... Coconut Rice 4 Cups Basmatic Rice (5 Cups if you want it milder) 1 Can of Coconut Milk 1 Can of Water 1 Cup of Sugar Steam rice or cook. Set aside. In a large pot, mix coconut milk, water and sugar. Bring to a boil over medium heat, stirring often. Once milk mixture has a reached a boil, add the cooked rice and mix thoroughly. Heat over medium heat for 5 - 8 minutes until all milk mixture is absorbed. Great hot or cold. Makes an excellent side dish, especially with Hawaiian Chicken.
