Cooked thighs - ideas?????

    I roasted some chicken thighs last night then decided I didn't want dinner after all.
    I'd like to use them tonight for something but my brain is vacant.

    I have pasta, Yukon gold potatoes and fresh celery & green onions, frozen broccoli & sugar snap peas.
    Swiss cheese in the fridge also.
    I need to go grocery shopping pretty soon.....

    Any ideas for a quick supper using the cooked thighs & what I have on hand?
    (payday isn't until Wednesday & I cannot stop for additions to my pitiful larder on the way home)

    stir fry or fried rice . . . just need soy sauce and an egg

    I actually have some hoisin sauce & brown rice.
    So stirfry it is!
    Wish I could stop for some bok choy......

    Use your celery,onions, brocolli, and sugar snap peas to make a stir fry as a side.

    It's an Emo Phillips quote & it took me a while to "get it"

    BTW: my Lo Mein came out yummy.
    I still have one thigh left so that is going to be lunch today or tomorrow covered wwith Swiss cheese & some honey mustard - kinda like a Reuben.
    I do have some homemade pickled green tomatoes - perhaps they can sub for the kraut?
    Now I need a nice crusty roll.....
