Cooking skinned chicken

The guy that does my butchering doesn't like to pluck the birds, he likes to skin them as it's so much faster and easier. That's ok but I don't know how to cook them. I cooked one in a slow cooker and it was rather dry, especially the outer layer of meat, from lack of skin. How do you cook them?

Debone them and use them in many dishes.

Skinned do not make good fried, or roasted in my opinion.

Now sweet and sour chicken, or chicken fettucini, yummmmmm......
