Cucumbers

    cucumbers and onions?

    There are two ways I know of to make them - one is peel and slice cucumbers - slice onions add equal parts apple cider vinegar and water and salt and pepper to taste (these taste better if they sit in the fridge for a few hours before you eat them)

    The second way is one cup of acv, one cup of water, and 1/4 cup of sugar heated in a pan. Add salt, pepper, and celery seed to the cukes and onions, then pour the heated liquid with the sugar disolved over the vegies and let cool in the fridge. Once cooled they are delicious!

    We also eat a lot of "cucumber salad" around here. Which is just diced up cucumbers with kraft light asiago and parmesean vinegarette on them. Pretty tasty.

    Kosher Dill Pickles

    Ingredients
    · 1 gallon cucumbers
    · 1/3 cup dehydrated minced onion
    · 2 teaspoons dehydrated minced garlic
    · 1-1/2 teaspoons mustard seeds
    · 4 teaspoons dill seed
    · 1 1/2 quarts water
    · 2 cups cider vinegar
    · 1/2 cup canning salt…(I couldn’t find canning salt so I just used plain table salt with no iodine)

    Slice cucumbers lengthwise into quarters add to jars.

    Boil liquids and seasonings for 5 minutes to dissolve the salt and wake up the flavors, then cool. Pour over pickles and let sit on counter for three days turning them occasionally. Then refrigerate.

    They will keep for a year.

    Please do not try to use the regular grocery store cucumbers, they have wax on them and they will not turn out. You can use grocery store pickling cucumbers, as they are not waxed.

    Sliced cucumbers, sliced sweet onions, *mayo, apple cider vinegar ,white sugar and a wee bit of salt and pepper... to taste* let set in the fridge while you finish dinner. you can also throw in quartered tomatoes VERY YUMMY cucumber salad.
