Deep littering - am i doing it right?

Hello,
it's autumn and soon it's going to be winter.
Some nights the temperatures drop below 0 and someone adviced me not to throw out the pooped straw but leave it in the hutch and add in a new layer of clean straw. I did like that but added some disinfection powder that i use for rabbit hutches. I've been doing it for 3 weeks and i'm wondering if i should clean the whole bedding now and replace it with a thick amount of straw? Or should i leave it like that till winter, adding straw each week?
What about ammonia? I cover part of the wire net at night so that the temperature isn't that low (and it seem to work!)
 
Forgot to mention that i keep them outside in a hutch and the hutch floor is made from wooden planks. Would the deep littering damage/make them rot?
