So I know chickens can't have raw beans and legumes but if I cook them, like lentils and chickpeas, then dehydrate them in my dehydrator and grind them in my food mill the chickens (ducks, geese, and turkeys too) can eat them just fine right?

hello @Caitchick , welcome to BYC :frow

you could just give them cooked and cooled, and save the nutrients that will be lost or damaged by dehydrating and grinding (and save yourself the bother and cost of the last two stages).
You could also ferment (cold cook) them instead of (hot) cooking.
Peas can be given raw.
