Green Chilie, Cheese and Fried Egg Sandwiches
Our official New Mexico state question is:
Red or Green?
I kid you not, it refers to what color chilie you want on your food! We eat a lot of mild green chilie, our favorite. Here is DH's favorite sandwich.
Fry 5 eggs in a nonstick skillit with a quick spray of oil.
Get out two slices home made whole wheat bread (or other type like sourdough works too), spread with mayo
Put the bread on a cookie sheet lined with foil for easy cleanup
Put the 5 eggs on one half and lay a couple of thick green chilies on top, we use frozen (defrosted) but canned will do, they need to have been cooked and peeled
Put a thick layer of sliced cheese on the other slice of bread, sharp cheddar or pepper jack are our favorites
Broil both slices till the cheese just melts and the chilie is warm
Carefully put the sandwich together and enjoy!
We make one sandwich and share it 1/3 me, 2/3 DH, just so we don't feel so guilty and so we can enjoy it more often
