You have some incorrect information in there. Read the Turkeys 101 thread.

    https://www.backyardchickens.com/t/...-turkeys-what-do-i-need-to-know#post_11309891

Hatch time is 28 days and lockdown is 25 days.

Butcher age depends on whether you have BBs or heritage turkeys.

Sexing at young age is difficult. Adults are sexed easily. Toms have a much larger snood, are more likely to display and the only ones that can gobble.

Most people do not use medicated feed. It will not harm the turkeys but in most areas it is not available unless special ordered.

You pm'd me and I said I would look over your plan. I am having trouble typing on the pm part of this forum so will respond here. This appears to be a list of questions which I am not able to answer because they are general questions related to turkeys and I only have experience with mine. I recommend you do your own research so that you will better understand it.
Most of what I have learned about chickens and turkeys is through observation, talking to people and researching issues as they arise or as they occur to me as questions.
If you go on a regular online search there are many university papers posted that will give you what you want.
    good luck
