They should lay green eggs. Their appearance is going to be influenced by both parents, so that will vary according to the genetic color of the Ameraucana and which gender parent of barred rock is used in the cross.

If I breed a Ameraucana rooster to red Sussex hens, will their offspring lay colored eggs?

I don't see any reply that you did or didn't breed them ... this is what they look like when dad is a barred rock and mom is an Ameraucana... they're barred like dad but have fluffy cheeks like mom and the wide tail like mom. These are my hens. It is hard to tell in the photo their fluffy cheeks. They're not laying yet so I don't know the color eggs yet but I'm hoping for green as everyone says they will lay.
