I know, thats the hard part. I love quiche its great way to use up eggs when you have too many & you can throw (in reason) any leftover in, or just use up what's on hand.....

This is the one that I make. It's from foodtv.com. Delicous and easy.

Quick Quiche Recipe courtesy Elizabeth Gilroy, Talkeetna, AK
    4 eggs
    1 cup half-and-half
    1/2 cup mayonnaise
    2 tablespoons flour
    1/3 cup minced onions
    Salt and garlic powder
8 ounces shredded Swiss or sharp cheddar cheese
    1 package frozen chopped spinach
    1 premade piecrust

Preheat the oven to 350 degrees F.
In a large bowl, whisk together the eggs, half-and-half, mayonnaise, and flour. Add the remaining ingredients. Place the piecrust in a deep, 9-inch pie dish. Pour the egg mixture into the crust and bake for 45 minutes to 1 hour or until the top is golden brown.
