On OregonBlues suggesting, I tried cutting up all the meat off of a fairly small swede duck I had to skin due to pin feathers and stir fried him in ginger, soy sauce and onion, then added a bag of frozen asian veggies, a couple sliced up sweet peppers and some teriyaki, then served it on a bed of brown rice. YUM! is all I can say. I slipped it in there, fed 8 people on one small duck and even the relatives who don't care for duck raved on my "beef stir fry". It pays to think outside the "roast duck" box.
