Next weekend I am having some people over to carve pumpkins. We plan on toasting the seeds to have as a snack. Can we give the raw stringy pulpy stuff to the ducks? Should we limit how much of it they eat?

Yes, and IMO, not necessary to limit it, they'll eat what they want and stop before they eat too much so as to get sick.

Just make sure nothing you feed them is rotten or moldy. Sometimes pumpkins have mold inside when they aren't rotten to the point of being squishy yet, and some molds produce toxins.
