Some deal with the males at 5-6 weeks to avoid the crowing and fighting. I don't think I've read of anyone doing the females that early. In general it seems 8 weeks is where you get most meat for the feed you put into them but they are still putting on a little weight by 10 weeks, which is why some wait.

I think some people limit the light their birds are exposed to if they are intending to eat them. That way they reach sexual maturity later and put on more muscle rather than energy being diverted to 'other' activities.
