Egg cutlet

Hard boiled eggs - 5 nos
Potatoes(medium) - 2 nos
Onion(big) - 1 no
(finely chopped)
Green chillies - 6 - 8 nos
Garlic - 2-3 cloves finely chopped
Ginger - A small piece finely chopped
Pepper powder - 1/2 tsp
Salt - As reqd
Curry leaves - A few(optional)
Egg(beaten) - 1 no
Bread crumbs - 1 cup(powdered)
Oil for frying

Method

Cook the potatoes and mash well. Cut the eggs into halves and remove the egg yolks.

Heat oil in a pan and Saute onion with salt, green chillies, garlic, ginger and curry leaves, till brown.

Add the mashed potatos and pepper powder.Saute for 2 minutes and remove from heat.Add the egg yolks and mix well.

Take a half of one boiled egg white and fill it with the potato, egg yolk mix and press well.Dip the cutlet in the beaten egg and roll it on the bread crumbs.Deep fry in oil and Drain on a paper towel

Garnish with onions rings and mint leaves/ fried liver pieces

[Refrigerating the cutlets for a day before frying, prevents breaking.
You can use minced meat instead of potato. Mixing a tsp cornflour with the egg for coating will make the bread crumbs stick more.]
