Egg dishes--crepes,deviled eggs,custard,soufles,omelets,and ...How many ways can you eat eggs?

    Im sick of eating out and big grocery bills,sooo..., I decided I m going to see how many different
    egg dishes I can use to compose 50% of my diet of and try it....that chili omelet
    dish sounds like a good start. I have 14 new layer chicks growing now,so I will have an abundance of eggs in 3 months.

    Does anyone have favorite Egg dishes they'd like to share? Or conventional recipes they modified with extra eggs-for
    example,I was trying to bump up the protein/nutrition in traditional Pumpkin Pie last yr by adding extra eggs,and ended up with a tasty new pumpkin souffle desert recipe. Souffles are usually beyond me,though,as its hard to get them to rise right...
    HOW many ways can u eat eggs?
    In this economy,why not use more eggs?...I dont believe the cholesterol thing re eggs-from my experience its bunk...

    Omelets, quiche, eggs and potatoes, french toast, baked goods, custard, egg McMuffins (home made), fried egg sandwich, fried rice, deviled eggs, chef salad....

    A fried egg on top of a hamburger is wonderful, That's the way they serve hamburgers in Belgium. Yum.

    Homemade mayonnaise, aoili, blue cheese dressing. Some salad dressings contain egg.

    I like to keep hard boiled eggs on hand for tossing into salads, sandwiches, etc. You can even do them in the oven, if you're doing a lot at one time.

    If you like poached eggs, here's an easy method for slow-poaching (or so I'm told. this is on my "things to try" list.) You end up with soft-cooked eggs still in the shell, so you can pop them in the fridge for later. Plus, they don't fall a part while they poach!

    Once it's summer and the tomatoes are in, try a tomato-avocado-hard boiled egg sandwich for lunch. I also keep soba noodles and veg stock on hand for a quick soup (toss in whatever veg you have around), then crack an egg into the boiling broth or add some hard boiled eggs on top. I agree with Oregon - anything topped a fried egg on it is delish. Leftover pizza + egg is an especially good breakfast, IMO.

    And remember that homemade ice cream takes a lot of eggs for one batch. Toss some of those Maine blueberries in there, too! You could use a bunch of egg whites for meringue cookies and pavlovas, and put the yolks into an aioli. OH, and what about an egg benedict with lobster? super yum!

    Spaghetti alla carbonara which is spaghetti with pancetta or bacon in an egg sauce with cream.

    Many versions, some use linguine. Can be found in any Italian cookbook, a basic staple and easy to prepare eve for a novice cook.

    Crepes are my favorite high egg dish followed by french toast for breakfasts.
    Potato salad, egg fried rice, or fried egg on toast for side dishes or a quick snack.
    Meringue pie (lemon, lime, or others), chiffon cakes, flans, lemon curd (sort of a sweet tangy extra rich custard used as a cake filling or on toast), custards, lemon cake-top pudding, and cheesecakes for the dessert list.
    Quiche or a heartier version of egg fried rice for a main dish using lots of eggs.

    Most of these recipes use lots of eggs already and many of these recipes can handle an extra egg. I just look through recipes for these and search till I find a version that uses more eggs or looks like it could handle more eggs without the recipe failing.

    Try making bread pudding or rice pudding. Works great for breakfast as well as dessert.

    My husband and I love a couple of dishes with tomatoes, take a can of tomotoes (I use home canned) and put them in 2 small oven proof baking dishes. Put them in a preheated 350 degree oven until they are bubbling hot. Take them out of the oven, crack a room temp egg into the middle of each tomato dish, sprinkle with salt, pepper and parm cheese. Back into the oven and bake until egg is done to desired consistency.(runny is around 5-8 min) Yum, good with a side of veggies.

    Another dish that is good is to put cooked spinach in your casserol dish and let it heat up. Then put egg in as above. That is yum too.

    If you just use the basic method for this recipe you can put most anything in the oven proof dishes and after you heat it up you can add your egg. The possibilities are endless. precooked rice with your favorite veggie, try warming mashed potatoes and a side of veggies with the egg on top.

    These are great last minute, oh I forgot to take something out of the freezer meals!!

    Also, you can poach an egg and place on the top of your cooked pasta, cover with sauce and parm cheese. Again, yum.

    Oh my, I better eat my lunch, I must be hungry. All these dishes sound good to me. Hey, I forgot to take anything out for supper!!

    remember alot of breads and rolls use eggs, and my fav cake death by chocolate takes 8 eggs for one layer. eggs are the most nutritios food available
